REGAL 3 tablespoons butter or margarine 1/2 cup red and green pepper 2 tablespoons flour 1 cup milk 1/2 teaspoon salt Dash of pepper 1/2 cup shredded Cheddar cheese 4 hard-cooked eggs, chopped In a saucepan melt butter or margarine and sauté peppers. Add flour. Gradually blend in milk, salt, and pepper; cook, stirring, until thickened. Add Cheddar cheese and stir until melted. Gently mix in chopped egg and season to taste. Serve hot on English muffin or biscuit. Makes 4 servings. |
APPLESAUCE
OATMEAL MUFFINS 1 cup butter or margarine (1 stick) 1 ½ cups brown sugar, firmly packed 2 eggs 2 cups flour 1 teaspoon cinnamon 2 teaspoon baking powder ½ teaspoon baking soda ½ teaspoon salt 1 ½ cups applesauce 1 cup raisins 2 cups quick rolled oats ½cup chopped nuts Preheat oven to 350 degrees Fahrenheit. Cream butter or margarine with brown sugar until light and fluffy. Add the eggs and beat well. Add applesauce and dry ingredients, stirring well. Add the remaining ingredients and mix well. Spoon into well-greased or lined muffin cups. Bake at 350 degrees in oven for 25 to 30 minutes or until done. Cool on a rack. Makes 24 muffins. |
